The saddle and jacket method of cooling is simple and effective.
This saddle is designed to be attached to a standard glycol cooling unit. Cold coolant fluid is constantly pumped around the hollow saddle, keeping the interior temperature at an ideal level for serving real cask ale.
The saddle should be insulated with a ready-made insulating jacket. This method is good for both beer engine (handpump) and gravity dispense - the optional blackboard shown here is for serving by gravity.
A glycol chiller and pump, standard for cooling keg lines, is required.
